Dessert Crepes

Ingredients:

3 eggs
1.5 cups of milk
1 cup + 1tbsp all-purpose flour
1/2 tsp vanilla extract
3 tbsp butter
2 tbsp granulated sugar
and whatever you want for fillings
I chose:
Blackberries
Strawberries
Whipped cream


Put the eggs, flour, sugar and 1/2 cup of the milk in a bowl.

ONLY 1/2 CUP OF THE MILK
Otherwise it gets lumpy and nasty.

Mix it up until it looks all creamy and awesome

You can also do this in a blender/food processor.


Melt the butter

Put the melted butter and the rest of the milk in the bowl and whisk the hell out of it.

It'll be thin and you'll be like WTF but don't mess with it. It should be the consistency of chocolate milk

Note: Do not grip 'n' sip.


Put it in something that makes it easier to pour.

Put a 6 inch pan on your stove and turn it to medium-high heat.


Your dirty dishes -- CLEAN ZEM.

If drops of water skitter around like crazy on your pan, it's ready.

Get some butter/oil or cooking spray (if you're lazy like me) and spray it as much as you need.

French people use butter.

Pour the batter in a ring around the pan and tilt the pan until it covers the bottom.

You want it to be THIN.

Once the edges are brown, make a FORWARD + UP motion with the pan to flip it. Or just use a spatula.

Cook the other side for 10-15 seconds.


Once the crepes are done, get your fillings ready.

I cut up some strawberries and mixed them with sugar.
Then I simmered the blackberries with some water and sugar (covered) until they popped then i reduced it (uncovered).

Zis is called a compote, connard.


Put zat merde on ze crepe, fold it like zis, and VOILA!
